1lbCaster sugar
8ozButter; softened
6 Eggs; whisked thoroughly
12ozPlain flour
1/2tsGround cinnamon
1 Lemon rind; finely grated

This is a very light sponge, mentioned by Sir Walter Scott in his novel "St. Ronan's Well." It is an early example of eggs being used as a raising agent. Cream the butter and sugar until it is light and frothy and gradually beat in the whisked eggs. Beat well for a few minutes.

Add the lemon rind and cinnamon. Gradually add the flour, beating continually to keep the mixture light.

Pour the mixture into a large cake tin which has been lined with well greased paper. Bake for about 35 minutes at 375øF / 190øC / gas mark 5.

The cake should be golden brown and well risen. Allow it to cool in the tin, on a rack for about 10 minutes. Remove it from the tin and cool on the wire rack.
